Bambi Bakes valentines day red velvet cupcake tutorial! My first ever YouTube video! Hope you guys like it, let me know what you think and if you have a go at making them. I just finished decorating the cutest little cake this morning, it really is darling.
You will have to wait until tomorrow to see pictures however, because it is a present for my boyfriend, and he also happens to be quite handy with a camera ;)
In other exciting cake news, this week I booked a place on the ‘The Essential Chocolate Experience’ at Slattery’s (www.slattery.co.uk). Slattery is literally set like the scene out of Charlie and the Chocolate factory, an absolute dream. I am going to be spending an entire week there in April, learning how to make chocolates, chocolate cakes and chocolate centerpieces. I am so excited I could squeal. I literally jumped for joy when I heard they had a place left for me. Yeah, maybe I do need to get out more…

Vegan carrot cake cupcakes with vanilla frosting. Delcious!
Recipe taken from Vegan Cupcakes Take Over the World;
Oven - 180 C / 350 F
I used vanilla vegan butter cream icing, however I think these would taste even more awesome with vegan cream cheese frosting, if you are lucky enough to be able to get vegan cream cheese where you live!!

You said I must eat so many lemons, cos I am so bitter…
Here’s what y’all have been waiting for, my delicious, light and moist vegan lemon and lime cupcakes. I adapted the recipe from Isa Chandra Moskowitz’s book - Vegan Cupcakes (Amazon, £6.99). You will need a cup measure for this.
Ingredients;
I kind of made up the frosting because I am not sure what shortening is… I used approximately;
and of course the obligatory dusting of disco dust, in lemon!
These came out super light, fluffy and delicious, they were obviously rated as delicious by all that tasted!

Made a couple of vegan cupcakes tonight;
All are delicious, I know because I have tried them. ALL of them, ha.
I’ll post individual posts and recipes for all of them. My boyfriend is bringing his shiny camera around tomorrow so I’ll get some pretty pictures for y’all.

Uh, hello, where have you been all my life?!
This morning I have made Vegan Peanut Butter Cupcakes (taken from the Vegan Zombie’s wacky cake recipe - check it out http://www.youtube.com/user/ZombieGate#p/search/0/wz2q1SZw7-Q). These are so yum. My housemate just said they taste like Hershey’s peanut butter cups. We agree the cupcake requires a touch more chocolate so I will use a half cup instead of a third of a cup next time.
Seriously do not feel like I am missing out on anything by having cruelty free cupcakes. In fact they are so much healthier than regular cupcakes (only 5tbsp oil in all 12 cupcakes) that I might even have 2…
The perfect 3pm treat. Yum.
