I must apologize for my lack of blogging recently, it has been a hectic few months - sitting exams, graduating and moving to the beautiful Bristol!
This is the cake that I was commissioned to make for one of my lecturers leaving party.
The map was pretty fiddly to do but I loved the vibrant colours (it was MUCH brighter in real life!).
The cake was a traditional vanilla sponge with vanilla buttercream and jam filling, and I am told that it was yummy!
I shall keep this post short and sweet because I have lots of things to do today but I have a couple more cakes to blog about very soon :)

This cake was a last minute order for a boy named Tom’s 18th Birthday.
It is a very simple, almost boring looking cake on the outside, with a crazy secret on the indide. The rainbow cake returns. It really is the Jekyll and Hyde of cakes!
You may notice my writing is not entirely perfect. This is because writing is my weakest point anyway, and during the decoration of this cake we had five powercuts! How can I work in these conditions?!
I have been informed, that the cake was a huge success, and even the lady’s cake loathing husband enjoyed a slice or two!

They say you are what you eat, so does that mean I’m bright and sweet?
Wowzers. Gobsmacked.
I made the WhiskKid’s rainbow cake for my dear friend Jacqui.
It was epic. Six entire layers of delicious vanilla cake, layered with lashings of cream cheese frosting and topped off with sugar paste.
But not just any old sugarpaste. I painted the cake to resemble sailor style tattoo’s because the darling Jacqui has quite a penchant for tattoo’s.
The cake was a total success, when I told Jacqui that there was a surprise inside she was sure that it was going to explode and I saw a grin emerge from her face as she sliced the cake to reveal the joyful secret that it held inside.
This cake is Jacqui to an absolute t. Decorated on the outside and (good) crazy within. Perfection.
I’ll post a blog of how I made this absolute delight, and the recipe - I adapted a red velvet cake recipe (because I had buttermilk to use up) just to make life hard for myself! It tasted so amazingly delicious though.

I just finished decorating the cutest little cake this morning, it really is darling.
You will have to wait until tomorrow to see pictures however, because it is a present for my boyfriend, and he also happens to be quite handy with a camera ;)
In other exciting cake news, this week I booked a place on the ‘The Essential Chocolate Experience’ at Slattery’s (www.slattery.co.uk). Slattery is literally set like the scene out of Charlie and the Chocolate factory, an absolute dream. I am going to be spending an entire week there in April, learning how to make chocolates, chocolate cakes and chocolate centerpieces. I am so excited I could squeal. I literally jumped for joy when I heard they had a place left for me. Yeah, maybe I do need to get out more…

Vegan Mocha Cupcakes, for a pretty little pick-me-up.
For the cake I used this recipe;

I adapted the buttercream recipe from one of Eric Lanlard’s recipes in his book ‘Cox Cookies and Cakes. I used;
These were so good! Due to the fact that there is no animal fat in these cupcakes, the coffee and chocolate flavours are really prominent. The cupcake is super moist and delicious! Yum Yum in my tum.
I have made the non-vegan version of these and these were definitely the best!

All are delicious, I know because I have tried them. ALL of them, ha.

Uh, hello, where have you been all my life?!
This morning I have made Vegan Peanut Butter Cupcakes (taken from the Vegan Zombie’s wacky cake recipe - check it out http://www.youtube.com/user/ZombieGate#p/search/0/wz2q1SZw7-Q). These are so yum. My housemate just said they taste like Hershey’s peanut butter cups. We agree the cupcake requires a touch more chocolate so I will use a half cup instead of a third of a cup next time.
Seriously do not feel like I am missing out on anything by having cruelty free cupcakes. In fact they are so much healthier than regular cupcakes (only 5tbsp oil in all 12 cupcakes) that I might even have 2…
The perfect 3pm treat. Yum.
